Last Fruits
Went out to the garden last night -- after dark, in the near-freezing rain, because I've been putting it off -- to pick the last of the tomatoes and peppers. Not a bad haul, given how much I neglected my garden this year. I used some of the tomatoes in taco salad last night, and I want to actually use the rest, if they ripen enough. I don't like wasting food, and I seem to slip the worst with the stuff I've grown myself.
Got me thinking about a number of things. One, that my garden isn't well-placed; it doesn't get enough sun. I'm thinking about possibly moving it to the smaller garden along the side of the house. I wouldn't be able to plant as much but they'd do better.
The other seems to want to get too long to go into a posting called 'short takes' or even 'shirt takes', so I'm gonna break that out into something else.

slice evenly - thicker if you like your fried foods to come out kinda mushy, thinner, if you don't like so much moisture. I slice at about a 1/4 of an inch, just because that's the way I've always done it.
Next, prepare the dredge (Yep, that's what it's called.) Take a cereal bowl and put 2-3 handfuls of wheat flour in it, and a handful of fine corn meal (or you can use the coarser stuff, but this will give you a better texture, in my opinion) Next, put in maybe some salt and pepper, or not, as you choose. Now, take a fork and mix all this together.
In the meantime, get a nice heavy frying pan (a cast iron one for preference, but the el cheapo from the Cooper's camping store has worked in the past.) Put your cooking grease of preference into it at a depth of about 1/4 to 1/2 inch. Alternatively, cook bacon until it crumbles if you look at it funny and gives up every bit of bacon grease. (You can also use lard, or olive oil.)
Your grease should crackle if you drop a single drop of water onto the surface. Now, take the green tomatoes and put them in the bowl with the flour mixture. For a faster way of doing this, put the tomatoes and the flour mixture into a gallon ziplock and dance around the kitchen whilst shaking the bag. People will give you odd looks, but that's half the fun.
Errr... Did I mention you should be wearing long, tight sleeves? It helps protect against the grease spit. Put in tomatoes in a single layer and let them get golden, then flip them over and let them get brown on that side too. Now take them out and put them on a plate. Smack marauding hands with the wooden spoon you keep for the purpose, until the whole thing is done. If you like, you can make cream gravy afterwards.
