African Peanut Stew
Mar. 16th, 2008 09:09 pmDice one large onion, one bell pepper, several cloves garlic and sautee in bottom of pot until done. Ad some carrot if you want, or celery, or whatever you have around. Sprinkle with oregano, paprika, garam masala, curry, ginger, whichever you have.
Add a couple cups of diced tomatoes, fresh or canned, whichever you have. Some tomato paste. A cup or two of peanuts. Some kind of poultry stock. If you're going to add peanut putter along with the peanuts mix it in with some of the stock first or it'll clump.
Simmer for a while. Add rice. Keep simmering until the rice is done. Toss in a handful or so of fresh cilantro. Serve. Put a couple more peanuts on top of each bowl if you want.
I added some ground beef becausethey would have used it if they'd had it I had some anyway. Or cut chicken into bite-sized pieces and sautee it with the veggies. Probably would work with pork too. I've heard of adding edamame but I find that weird.
Also goes well with potato, or sweet potato. Probably manioc too if you can find it. Really about anything can go in this I think.
